Elimination Diet
I didn't finish blogging about the retreat. Suffice to say it was all good. They gave me a diet plan which involves two weeks of no wheat, no dairy, no sugar, no caffeine and no alcohol. After two weeks I can start adding back things one at a time to see what bothers me. All I can say right now is that I'm bothered by no bread, no milk, no sweets or added sugar and no caffeine (headache). But I'm sticking with it as long as I can.

eeewww! So the big question on everyone's mind is what are you adding back in first!
Here is a veggie chili recipe that fits the requirements and is delicious with brown rice:
1 T olive oil
1 onion, chopped
1 red pepper, chopped
1 garlic clove, crushed
tin tomatoes
2 tins red kidney beans
tin green lentils
1 t mild paprika
1/2 - 1 t chilli powder
This really does make 4 servings, and freezes brilliantly.
1. Heat oil in large saucepan, fry onion and red pepper for 10 mins, then add garlic and tomatoes.
2. Drain the red kidney beans and lentils, reserving liquid. Add beans and lentils to pan, plus spices.
3. Simmer for 15 mins, add a little of the reserved liquid if mixture looks too thick. Season with salt, pepper and sugar.
